Instructions

Step 1

Preheat the oven to 425˚F. Line two baking sheets with parchment.

Step 2

Bring the milk, butter and salt to a boil in a medium saucepan over high heat. Add flour and mix vigorously until a ball of dough forms. Stir for an additional two minutes to dry the dough.

Step 3

Put the dough into a bowl of a stand mixer and add eggs one at a time on medium speed. Mix until a smooth dough is formed. Add mustard, Ontario shredded cheddar cheese, and mix by hand with a wooden spoon until fully incorporated.

Step 4

Spoon 1 tbsp of the mixture onto a tray with parchment paper. Leave about two inches between each scoop.

Step 5

Put the trays into the hot oven, and immediately turn the oven down to 375˚F and bake for 15 minutes or until puffy and golden. Serve immediately.
